Gluten Free Banana Bread Recipe

3 medium overripe bananas, mashed
1/3 cup melted butter (plant butter works well too)
3/4 cup granulated sugar
1 large egg, beaten
1 tsp vanilla extract
11/2 cups of GF flour (I use Bob’s Red Mill 1to 1 baking flour. You want a brand with xantham gum)
3/4 tsp baking soda
3/4 tsp baking powder
1/2 tsp Kosher salt

Preheat oven to 350 degrees. Grease (or line with parchment paper) a 8×4 inch loaf pan. Mix dry ingredients together in a large bowl, stir with whisk. Mix wet ingredients together, then combine with dry ingredients to form a batter. Mix batter with a stand or electric hand mixer for 2-3 minutes. Pour batter into loaf pan. Bake for 50 minutes to 1 hour, or until a toothpick inserted in the middle is clean and batter/crumb free. Place bread on cooling rack. Allow bread to cool 20 minutes before removing from pan and cool completely before slicing.
